Most previously chef at Westside Tavern in Los Angeles, another Consilient property, Schwartz is a veteran of the highly-lauded Patina and Saddle Peak Lodge in Los Angeles; he just moved to Keller in May.
American F+B is a contemporary, upscale American bar and grill that'll emphasize artisan ingredients and seasonality. It'll combine elements from The Porch in Dallas and Westside Tavern in Los Angeles.
Schwartz said that American F+B will put an emphasis on good products, treated well.
"We're going to have a small, focused menu in order to pull off what we want to pull off," he said. "So much of my sensibilities and Tristan’s sensibilities are about really great sourcing and presenting the product well. When I first started cooking, I always wanted to emphasize how complex things were, but as I’m getting older, I’ve come full circle to where it’s about great product and putting it out there."
Fine dining restaurants have changed from the days when it was fancy food on fancy china, he said.
"Now it’s about honesty," he said. "With Food Network, people are so into food and cooking and products. They want the best product but it needs to be real. That's what American F&B is all about."
It'll have seating for 200 with 6,215 square feet, and is going into West 7th, the same mixed-use development where its sibling Fireside Pies is located, in a prominent spot on the corner of Crockett and Currie Streets.
Schwartz is a well known travel buff who, while chef at the Viceroy Santa Monica hotel, had a separate menu of dishes he'd gathered from his travels. In December, he went to Peru where he wrote a diary entry for Afar.com; he came back with a passion fruit pisco sour cocktail that he added to Westside Tavern's menu.
American F+B is slated to open in early 2013.
"We think American F+B will be the most compelling restaurant that Consilient has produced to date," said Tristan Simon, founder and CEO of Dallas-based Consilient Restaurants.
